YAKITORI UM

About us

Tsukune with egg yolk at Yakitori um

Whole birds,
skewered one by one.
Concept

On the fourth floor of a building in Shirokanedai, Tokyo, a yakitori restaurant with 15 seats. We buy Amakusa Daio chickens whole from a designated producer, break them down by cut, skewer each one by hand and grill them over binchotan charcoal. Alongside the counter there is a terrace looking out to Tokyo Tower.

Craft

Charcoal, and fire.

Skewering was learned at a starred yakitori restaurant, and the handling of fire at a French restaurant in Ginza. Thigh, liver, tail, wing, neck, tsukune, heart, oyster, back liver, white liver — each cut is grilled in its own way.

The wine list runs from red, white, rosé and orange through to champagne. Bottles sourced from our affiliated wine shop are also served by the glass.
